Mac n Cheese

Mac n Cheese is without a doubt my go to comfort food. When I'm feeling depressed or anxious and I don't know what to eat, I know I can eat this. I use to eat this on a hangover or at 3 o'clock in the morning after a night out.

Serves 4

Ingredients

​

225g macaroni or penne pasta

100g cheddar cheese, plus an extra 50g for later

225g mozzarella cheese

Large knob of butter

2 tbsp of plain white flour, organic if possible

500ml milk, organic and full fat if possible

Streaky bacon or lardons of bacon

Method

​

Heat the oven to 200ºC.

Boil the pasta for 8 minutes and drain once done.

Melt butter in a saucepan over a medium heat. Using a whisk or wooden spoon, stir in the flour. Cook for 2 to 3 minutes, or until mixture is lightly golden, stir constantly.

Gradually whisk in the milk, then bring to a boil, whisking. Reduce heat and simmer until thick (about 4 minutes).

Stir in the cheese until melted.

Stir in drained macaroni.

Meanwhile, fry the bacon until crisp. Stir into white sauce once cooked.

Pour into dish. Top with breadcrumbs and extra cheddar cheese, now don't be shy when scattering the extra cheese on top, it gives a fantastic golden chewy topping.

​

Bake for 20 minutes or until golden.
