Made with either animal bones or vegetables, stock is a staple in many cultures and has been for centuries. Stock, or bone broth, is an incredibly comforting food, sort of like eating chicken soup for your soul. It's very nourishing and comforting. I like to make my stock from high quality bones that are slowly cooked in plenty of water to extract all the nutrients and flavour.
Some people like to drink it, I personally prefer to add it to my soups, gravy or sauces.

General Stock Making Tips

Stock will keep for up to a week in the fridge. If you want to keep it for longer then you can boil it up again every couple of days.
Stock also freezes for up to six months. You can freeze it in ice cube trays to add a little flavour to gravy's and other dishes.
If you have only one carcass and do not want to make a small quantity of stock, you can freeze that carcass and when you have a couple more you can make a bigger pot of stock.
Don't add chicken livers to your stock because they can make your stock bitter.
