Raspberry & Lime Chia Pudding Parfait

Serves 2


1 cup raspberries

1 cup unsweetened  coconut milk

2 tbsp raw honey

1 tsp lime zest

1 tsp lime juice

3 tbsp chia seeds


1/2 banana, thinly sliced

1/4 cup raspberries

1/4 cup wild blueberries 


Place the raspberries in a bowl and mash with a fork. Stir in the coconut milk, raw honey, lime zest and juice and chia seeds.

Set aside to soak for 2-3 hours, until thick and jelly-like.

Divide between two glasses or bowls and serve with the bananas, raspberries and blueberries.
