Egg Salad

This makes a quick, easy and light supper. It's also great to eat as a hangover cure - although not that comforting.

Serves 2

Ingredients

​

2 peppers, red or green

2 tsp olive oil

Knob of butter

4 boiled eggs

Cherry tomatoes

1 bag of spinach

​

Method

​

Heat the oil and butter and roast the peppers and tomatoes. Boil the eggs for 6-8 minutes.

​

Once everything is cooked add to the bed of spinach.
