Bangers & Sweet Potato Mash
4 large sweet potatoes, peeled
3 spring onions, finely sliced
Preheat the oven to 180ºC
Roughly chop the sweet potatoes and put in a pan of cold water. Bring to the boil, then reduce the heat and simmer for 20-25 minutes until tender.
Meanwhile drizzle a tray in olive oil and put the sausages on. Cook for 20 minutes.
Drain the potatoes, then return to the hot pain with the butter, mash until smooth. Taste and season. Stir through the spring onions half of the spring onions and scatter the rest over the top.
To garnish, sprinkle with toasted sesame seeds.
